My favorite bread is "pan robi"
Pan Robi is produced in the province of Biella, it has a rounded shape, a compact consistency and a piece of about 200-400 grams. It's obtained using milled maize flour rather roughly united to wheat flour or rye (every 10 kilos of yellow flour use 8 chili of white flour), water, natural yeast,
salt and an olive oil spoon. In order to make to leaven the bread, it is
used a bit of leavened dough of wheat called "Dough mother".
